WHY I LOVE THIS RECIPE: The addition of orange juice makes this my mother-in-law’s recipe. She thought that OJ enhanced the flavor of so many dishes, including this one. We serve it during the New Year holidays.
Apple Honey Cake
This is such an easy recipe. I love the aroma of the batter as it bakes.

Ingredients
- 3-1/2 cups flour
- 1 Tbsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp allspice
- 1 cup oil
- 1 cup honey
- 1 cup sugar
- 1/2 cup brown sugar
- 3 eggs
- 1 tsp vanilla
- 1 cup warm brewed coffee
- 3/4 cup orange juice
- 1 Granny Smith apple, sliced thin
Instructions
- Preheat oven to 350° F.
- In a large bowl whisk together flour, baking powder, baking soda, cinnamon, cloves and allspice.
- Make a well in the center and add oil, honey, sugars, eggs, vanilla, coffee and orange juice.
- Beat on low speed until well combined.
- Stir in sliced apple.
- Pour into greased pan and bake for 60 to 70 minutes.
- Let sit in pan for 15 minutes before removing to wire rack to finish cooling.
