Green Beans with Lemon and Garlic

WHY I LOVE THIS RECIPE:  I love crispy green beans and this one is so good with garlic and lemon juice. It is a perfect summer side dish.

Green Beans with Lemon and Garlic

Ingredients

  • ¾ lb green beans, ends removed
  • ¼ red onion, finely chopped
  • 3 cloves garlic, minced
  • ½ tsp salt
  • 2 Tbsp olive oil
  • 3 Tbsp fresh lemon juice

Instructions

  • Bring water to boil in a medium-sized pot.
  • Add green beans and cook for 3 minutes, or until tender-crisp. Drain.
  • Mix still warm green beans with onion, garlic, salt and olive oil.
  • Let sit at room temperature for an hour so the flavors meld together.
  • Just before serving add the lemon juice and mix well. Best when served the same day.

Notes

I've made these in the morning and served them at room temperature. They are good the 2nd day but fresher tasting the same day.
My cousin gave me this recipe and I LOVE it!
