Fish in Green Sauce

Ingredients
For the Green Sauce
- ½ cup olive oil
- ¼ cup bitter orange juice or regular orange juice
- 1 cup cilantro leaves
- ½ cup parsley leaves
- 1 cup green onions
- ½ tsp kosher salt
- freshly ground black pepper to taste
- ½ cup fish broth or water
For the Fish
- ¼ cup cilantro leaves
- ¼ cup water
- ¼ cup lime juice, freshly squeezed
- 3 cloves garlic
- 1 tsp kosher salt
- ½ tsp black pepper, freshly ground
- 3 lbs cod, cut into 4" x 4" squares
- 2 Tbsp olive oil
Instructions
For the Green Sauce
- In a blender, puree olive oil, bitter orange juice or orange juice, cilantro, parsley, chives, salt, and a pinch of pepper until smooth. Pour into a small saucepan and place over medium-high heat. When the sauce starts to boil, add broth or water and season to taste with salt and pepper.
For the Fish
- In a blender, puree cilantro, water, lime juice, garlic, salt, and pepper until smooth. Place fish on a rimmed plate and pour marinade over, turning to coat. Let sit 5 minutes.
- Heat oil in a skillet over medium high heat. Sear fish until golden and cooked through, about 4-6 minutes per side. Transfer to plates and spoon over warm green sauce to serve.
