You can serve chopped liver as shown with lettuce, tomatoes and olives; on rye bread; as a spread with crackers... So many options!

Ingredients

  • ¼ cup schmaltz, plus more if needed in food processor
  • ½ onion, chopped
  • 1 lb chicken livers
  • 3 hard boiled eggs, chopped
  • ¼ onion, chopped
  • salt to taste

Instructions

  • Heat schmaltz then add 1/2 cup chopped onion. Cook until onion is soft.
  • Add chicken livers and cook about 2-1/2 minutes per side. They should be just a little pink inside.
  • Chop the livers.
  • Put liver, hard-boiled eggs, sauteed onion, 1/4 raw onion and salt in food processor. Process all together, but keep it chunky. Add more schmaltz if needed for creaminess.
