Cinnamon Apple Stuffed Challah

Ingredients
- 2¼ tsp (1 envelope) active dry yeast
- 5 Tbsp plus 1 tsp sugar, divided
- 3½ cups all-purpose flour, divided
- ½ cup warm water (105°), or more as needed
- 2 lg eggs plus one egg yolk, divided
- ¼ cup canola or vegetable oil
- 1 tsp vanilla extract
- 2 tsp cinnamon, divided
- 1 tsp salt
- 2 Golden delicious apples, peeled and diced into 1/2" pieces
- ½ Tbsp room-temperature water
Instructions
- Whisk yeast, 1 teaspoon sugar, 1/2 cup of flour and warm water into a slurry. Let it sit for 10 minutes until puffy. Discard and redo if it hasn't puffed after 10 minutes.
- Mix in two eggs, oil, vanilla, 1 tsp cinnamon, and 1/4 cup (4 Tbsp) sugar into the yeast mixture until it is all mixed.
- Add the rest of the flour a little at a time (you may not need all the flour) and salt then mix with your hands into a shaggy ball.
- Knead the dough for about 10 minutes, or until it is smooth and slightly sticky. Add more flour if it is too sticky or more water if it is too dry.
- Put the dough in a clean bowl and cover with plastic wrap. Let it ferment in a warm place (I use the "proof" setting on my oven) for 2 hours, or until puffy and double in size.
- Sprinkle the peeled and chopped apples with the remaining 1 tsp of cinnamon and 1 Tbsp of sugar.
- Once dough is ready, divide it into three sections and roll each one out into a flat piece (about 18" long x 10" wide) on parchment paper. Sprinkle 1/3 of the apples at one end of each piece of dough and roll each section up the long way, making sure to avoid air bubbles.
- Braid the strands starting in the middle (or do a round braid) and put your challah on a sheet pan lined with parchment paper.
- Cover with plastic wrap and let rise 45 minutes or so, until it's light and fluffy looking
- While the bread is rising, preheat the oven to 350 F.
- Whisk the last egg yolk with 1/2 tablespoon room-temperature water and brush generously over the challah. Bake for 35 minutes or until golden brown.
