Chocolate Cheesecake
Ingredients
Crust
- 1½ cups chocolate wafer crumbs
- ⅓ cup butter, melted
Batter
- 4 pkgs 8-oz cream cheese
- 1 cup sugar
- ¼ cup flour
- 2 tsp vanilla
- 6 eggs
- 6 squares semi-sweet chocolate, melted
- 2 cups sour cream
Instructions
Crust
- In a bowl combine the chocolate wafer crumbs with the melted butter.
- Press the crumbs evenly over the bottom of 10" spring form pan.
Batter
- Preheat oven to 500 ° F.
- Blend cream cheese and sugar.
- Beat in flour and vanilla.
- Add eggs one at a time.
- Stir in melted chocolate.
- Add sour cream and blend.
- Bake 12 minutes at 500° F.
- Decrease heat to 200° F. Do not open the oven door!
- Bake 60 minutes at 200° F. Again - don't open the door!
- Remove from oven and cool 2-3 hours.
- Refrigerate at least 8 hours.
- Leave in the pan until you are ready to serve.
Notes
Why 500 degrees, then 200 degrees?
The 500 degrees warms the ingredients - and then the 200 slow cooks the cake - so it's evenly cooked. How come no graham cracker crust?
You can do one if you want. Won't hurt the recipe at all. Is all this sour cream necessary?
