WHY I LOVE THIS RECIPE: The addition of orange juice makes this my mother-in-law’s recipe. She thought that OJ enhanced the flavor of so many dishes, including this one. We serve it during the New Year holidays.

Apple Honey Cake

Ingredients

  • 3-1/2 cups flour
  • 1 Tbsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp cloves
  • 1/2 tsp allspice
  • 1 cup oil
  • 1 cup honey
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 cup warm brewed coffee
  • 3/4 cup orange juice
  • 1 Granny Smith apple, sliced thin

Instructions

  • Preheat oven to 350° F.
  •  In a large bowl whisk together flour, baking powder, baking soda, cinnamon, cloves and allspice.
  • Make a well in the center and add oil, honey, sugars, eggs, vanilla, coffee and orange juice.
  • Beat on low speed until well combined.
  • Stir in sliced apple.
  • Pour into greased pan and bake for 60 to 70 minutes.
  • Let sit in pan for 15 minutes before removing to wire rack to finish cooling.
