WHY I LOVE THIS RECIPE: The addition of a sliced apple makes this my mother-in-law’s recipe. She thought that OJ enhanced the flavor of so many dishes, but this one in particular. Nice for the High Holidays.
Apple Honey Cake
This is such an easy recipe. I love the aroma of the batter as it bakes.

Ingredients
- 3-1/2 cups flour
- 1 Tbsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp allspice
- 1 cup oil
- 1 cup honey
- 1 cup sugar
- 1/2 cup brown sugar
- 3 eggs
- 1 tsp vanilla
- 1 cup warm brewed coffee
- 3/4 cup orange juice
- 1 Granny Smith apple, sliced thin
Instructions
- Preheat oven to 350° F.
- In a large bowl whisk together flour, baking powder, baking soda, cinnamon, cloves and allspice.
- Make a well in the center and add oil, honey, sugars, eggs, vanilla, coffee and orange juice.
- Beat on low speed until well combined.
- Stir in sliced apple.
- Pour into greased pan and bake for 60 to 70 minutes.
- Let sit in pan for 15 minutes before removing to wire rack to finish cooling.
