Ingredients

  • 2 Tbsp tomato paste, canned (1-6 oz can covers 3 matzah boards)
  • 1 matzah board
  • 1/2 tsp oregano, dried
  • red pepper flakes, to taste
  • 1/2 onion, thinly sliced
  • 1/2 green pepper, thinly sliced
  • 4 mushrooms, thinly sliced
  • 3-4 black olives, thinly sliced
  • 1/3 cup mozzarella cheese, shredded
  • basil leaves, to taste
  • olive oill for brushing on matzah

Instructions

  • Preheat oven to 350° F.
  • Place a rack on a baking sheet.
  • Brush each matzah board lightly with olive oil
  • Spread tomato paste on matzah board.
  • Sprinkle with oregano and smoosh with a fork into the tomato paste. Add red pepper flakes then top with onion, green pepper, mushrooms and black olives.
  • Top with mozzarella cheese and basil leaves.
  • Bake in oven until the cheese melts, about 5-6 minutes.

Notes

Variations: Let your imagination go wild. You can change up the vegetables (eggplant, zucchini, squashes) but slice very thin. You can also add your favorite herbs, like thyme or marjoram. Red pepper flakes are very good if you like a bit of spice. HINT: Breaking the matzah board in half along a seamline makes for easier eating.
