Matzah with Apricot/Pistachio Glaze

I found this recipe in a magazine many years ago. I served it at the end of a Seder and everyone loved it so much that it has become a family favorite.

Ingredients

  • 1 box matzos
  • 11 oz white chocolate
  • 11 oz dark chocolate
  • 1-1/2 cups chopped dried apricots, dried fruit and/or crystallized ginger
  • 3/4 cup chopped, toasted pistachios, or other nuts

Instructions

  • Brush one side of each piece of matzo with melted white or dark chocolate.
  •  Drizzle remaining dark chocolate over white-chocolate-coated matzo and vice versa.
  • Sprinkle with fruit and nuts. Add crystallized ginger if using
  •  Refrigerate until chocolate is set, 15 minutes. 
  •  Break bark into pieces. 
  • Serve immediately, or store in the refrigerator for up to a week.

Notes

This recipe can easily be made without precise measurement. I sometimes melt about 1/2 cup of melted chocolate chips and chop a few apricots followed by a sprinkle of pistachios. This is especially good if you want to just make a quick treat.
