Tzimmes means "to make a fuss" in Yiddish. In cooking, a tzimmes is sweetened stew that can be made with or without meat, dried fruits and vegetables.

Ingredients

  • 1 onion, thinly sliced
  • 1 Tbsp fat from meat or vegetable oil
  • 6 lbs boneless short ribs
  • 5 potatoes, white and/or sweet, in large chunks
  • 1 lb carrots, cut in 1" rounds
  • ¾ lb dried prunes
  • ¾ lb dried apricots
  • 1 Tbsp lemon juice
  • 1/2 cup honey
  • 3 cups boiling water (or more if needed)
  • Salt and pepper to taste

Instructions

  • Preheat oven to 300° F.
  • In large dutch oven, brown onion in melted fat.
  • Add meat, potatoes, carrots, prunes, apricots, lemon juice, honey and water. Season with salt and pepper.
  • Cook covered for 2½ hours, flipping and re-submerging meat once. Uncover and cook for another ½ hour or until the meat is tender, periodically turning and submerging meat.
