Spinach Pie

WHY I LOVE THIS RECIPE: I love this recipe because it is a perfect lunch for Passover and can be prepped in advance.

Ingredients

  • olive oil
  • 1 bunch green onions
  • 2 lbs fresh spinach
  • 3 Tbsp fresh dill, minced
  • 1 cup matzah meal
  • 8 eggs
  • 4 Tbsp lemon juice
  • salt and pepper to taste

Instructions

  • Preheat oven to 350°.
  • Lightly cover the bottom and sides of a 9-inch springform pan with olive oil. Break a matzah board to cover the bottom of the pan and brush lightly with olive oil.
  • Saute green onions in a little olive oil until soft.
  • Add spinach and dill, in batches if necessary, until wilted. Place in a bowl.
  • Add matzah meal to spinach and stir together by hand.
  • In a separate mixer bowl, combine eggs and lemon juice and mix until frothy, about 5 minutes.
  • Combine egg mixture into spinach. Mix thoroughly by hand. Pour into prepared springform pan.
  • Bake until firm and lightly browned on the top. This will take 35-45 minutes.
  • Serve warm.
