WHY I LOVE THIS RECIPE: I love this recipe because it is a perfect lunch for Passover and can be prepped in advance.
Spinach Pie
Ingredients
- olive oil
- 1 bunch green onions
- 2 lbs fresh spinach
- 3 Tbsp fresh dill, minced
- 1 cup matzah meal
- 8 eggs
- 4 Tbsp lemon juice
- salt and pepper to taste
Instructions
- Preheat oven to 350°.
- Lightly cover the bottom and sides of a 9-inch springform pan with olive oil. Break a matzah board to cover the bottom of the pan and brush lightly with olive oil.
- Saute green onions in a little olive oil until soft.
- Add spinach and dill, in batches if necessary, until wilted. Place in a bowl.
- Add matzah meal to spinach and stir together by hand.
- In a separate mixer bowl, combine eggs and lemon juice and mix until frothy, about 5 minutes.
- Combine egg mixture into spinach. Mix thoroughly by hand. Pour into prepared springform pan.
- Bake until firm and lightly browned on the top. This will take 35-45 minutes.
- Serve warm.
