WHY I LOVE THIS RECIPE: I have such fond memories of my mother-in-law serving noodle pudding for dessert. You knew it was coming because the sweet cinnamon fragrance floated across the room. She served it slightly warm. The top is wonderfully golden brown and crispy. It is much lighter than you might think it would be. Everyone loved it!
Noodle Pudding (kugel) with Apples

Ingredients
- ¼ lb butter or margarine
- 3 eggs, lightly beaten
- ½ lb broad egg noodles, cooked and drained
- 4 apples, peeled and thinly
- ¾ cup raisins
- 2 Tbsp frozen orange juice concentrate
- 2 Tbsp cinnamon
- 1/2 cup sugar, brown or white
Instructions
- Preheat oven to 350°.
- Use part of butter or margarine to liberally grease 1 ½ quart baking dish.
- Mix together the eggs, cooked noodles, eggs, sliced apples, raisins, orange juice, cinnamon and sugar.
- Put in baking dish, dot with remaining butter, sprinkle with a little more cinnamon and bake for 1 hour.
Notes
You can use either golden or regular raisins for this dish.
