Brisket Stew with Beer

Ingredients

  • 3½ lbs brisket, untrimmed first cut
  • 1 Tbsp olive oil
  • 6 stalks celery
  • 6 large carrots, each cut into 3 long pieces
  • 1 large onion, cut into quarters and separated
  • 6 red potatoes, medium and unpeeled
  • 3 cloves garlic, peeled and minced
  • 1 Tbsp thyme
  • 2 tsp marjorim
  • 6 ounces tomato paste
  • 3 cups chicken stock
  • 1 bottle beer

Instructions

  • Cut beef brisket into 6 large pieces which I did not trim in order to add flavor.
  • Heat olive oil in large 8 quart pan.
  • Add brisket pieces and brown; then remove from pan.
  • Add all the vegetables, thyme and marjoram and saute for 10 minutes.
  • Return meat to pan with sauteed vegetables.
  • Add tomato paste, chicken stock and beer.
  • Stir well and bring to a boil, stirring frequently.
  • Reduce heat to low and cook for 3-4 hours, stirring occasionally.

Notes

The gravy from this recipe is perfect for kishke.
