Brisket Stew with Beer

Ingredients
- 3½ lbs brisket, untrimmed first cut
- 1 Tbsp olive oil
- 6 stalks celery
- 6 large carrots, each cut into 3 long pieces
- 1 large onion, cut into quarters and separated
- 6 red potatoes, medium and unpeeled
- 3 cloves garlic, peeled and minced
- 1 Tbsp thyme
- 2 tsp marjorim
- 6 ounces tomato paste
- 3 cups chicken stock
- 1 bottle beer
Instructions
- Cut beef brisket into 6 large pieces which I did not trim in order to add flavor.
- Heat olive oil in large 8 quart pan.
- Add brisket pieces and brown; then remove from pan.
- Add all the vegetables, thyme and marjoram and saute for 10 minutes.
- Return meat to pan with sauteed vegetables.
- Add tomato paste, chicken stock and beer.
- Stir well and bring to a boil, stirring frequently.
- Reduce heat to low and cook for 3-4 hours, stirring occasionally.
Notes
The gravy from this recipe is perfect for kishke.
