Fish with Green Sauce

WHY I LOVE THIS RECIPE: I love cilantro so this sauce is perfect.

Fish in Green Sauce

Ingredients

For the Green Sauce

  • ½ cup olive oil
  • ¼ cup bitter orange juice or regular orange juice
  • 1 cup cilantro leaves
  • ½ cup parsley leaves
  • 1 cup green onions
  • ½ tsp kosher salt
  • freshly ground black pepper to taste
  • ½ cup fish broth or water

For the Fish

  • ¼ cup cilantro leaves
  • ¼ cup water
  • ¼ cup lime juice, freshly squeezed
  • 3 cloves garlic
  • 1 tsp kosher salt
  • ½ tsp black pepper, freshly ground
  • 3 lbs cod, cut into 4" x 4" squares
  • 2 Tbsp olive oil

Instructions

For the Green Sauce

  • In a blender, puree olive oil, bitter orange juice or orange juice, cilantro, parsley, chives, salt, and a pinch of pepper until smooth. Pour into a small saucepan and place over medium-high heat. When the sauce starts to boil, add broth or water and season to taste with salt and pepper.

For the Fish

  • In a blender, puree cilantro, water, lime juice, garlic, salt, and pepper until smooth. Place fish on a rimmed plate and pour marinade over, turning to coat. Let sit 5 minutes.
  •  Heat oil in a skillet over medium high heat. Sear fish until golden and cooked through, about 4-6 minutes per side. Transfer to plates and spoon over warm green sauce to serve.
