Poached Salmon with Avocado Chimichurri
Servings: 6 people

Ingredients
Poached Salmon
- 6 salmon pieces, poached
- 1 lemon
- water to cover salmon
Avocado Chimichurri
- 3 avocados, peeled and diced
- ¾ cup parsley, chopped
- 6 Tbsp cilantro, chopped
- 1 Tbsp oregano, dried
- 3 garlic cloves, chopped
- 4 Tbsp red wine vinegar
- 3 Tbsp lemon juice
- 6 Tbsp olive oil
- salt and pepper to taste
Green Beans and Salad
- 1 pkg ready to microwave green beans
- mixed lettuces
Instructions
Quick Poached Salmon
- Add salmon to a large frying pan with a lid.
- Cover with water.
- Add a few lemon slices.
- Simmer until salmon is cooked and firm to touch about 15 minutes.
- Remove from water and drain. Refrigerate covered until ready to use.
Avocado Chimichurri
- Mixed all ingredients together.
- Add salt and pepper to taste.
- Place lettuces onto a large bowl or platter. top with poached salmon. Add green beans.
- Garnish with lemon, shaped as you like.
- Serve with Avocado Chimichurri on the side.
Notes
This recipe is easy to prepare in advance for a special lunch or cold supper.
