Israeli Salad
Servings: 4 people as a side
Great with eggs, hummus, bread or really any meal!

Ingredients
- 4 pickling cucumbers OR 1 English cucumber
- 5 lg tomatoes
- 1/2 onion, chopped finely
- juice from 1/2 a lemon
- 1 Tbsp olive oil, or to taste
- salt and pepper to taste
- chopped parsley (optional)
- other veggies chopped small (optional)
- finely chopped lettuce (optional)
Instructions
- Cut the cucumbers and tomatoes into small cubes. Traditionalists cut them pretty tiny but it really depends on what you like and how much time you want to spend on it.
- Add the onion, juice of half a lemon (or more if you like it a bit more acidic) and the olive oil.
- Add salt and pepper to taste.
- Add optional veggies if you so choose.
- Add optinal chopped lettuce
- Mix it up and eat!
