Passover Brownies

Ingredients
- 1¾ cups sugar
- 4 eggs
- ¾ cup oil
- ½ cup cocoa
- ½ cup coffee
- 1 cup matzo meal
- 2 Tbsp potato starch
- 1 tsp vanilla
Instructions
- Preheat oven to 350° F.
- In a medium bowl, beat sugar and eggs together till well mixed.
- Add the remaining ingredients and mix until a batter forms.
- Scrape into a greased 9" x 13" cake pan.
- Bake for 45 to 50 minutes or until a toothpick comes out clean when poked through the middle.
- Cool before cutting.
