Passover Brownies

Ingredients

  • 1¾ cups sugar
  • 4 eggs
  • ¾ cup oil
  • ½ cup cocoa
  • ½ cup coffee
  • 1 cup matzo meal
  • 2 Tbsp potato starch
  • 1 tsp vanilla

Instructions

  • Preheat oven to 350° F.
  • In a medium bowl, beat sugar and eggs together till well mixed.
  • Add the remaining ingredients and mix until a batter forms.
  • Scrape into a greased 9" x 13" cake pan.
  • Bake for 45 to 50 minutes or until a toothpick comes out clean when poked through the middle.
  • Cool before cutting.
