Chocolate Chip Cookies with Almond Butter

Sweet nutty cookie that goes well with coffee, tea or milk.

Ingredients
- 1 cup almond butter
- 1 egg, medium or large
- 1 cup brown sugar, packed down tightly
- 1 tsp vanilla, or omit if you are observant
- 1 cup chocolate chips
- 1/2 cup walnuts, chopped
- Sea salt to taste
Instructions
- Preheat oven to 350° F.
- Mix almond butter, egg, brown sugar, and vanilla with a fork or spatula.
- Fold in chocolate chips and walnuts
- Bake 11 minutes and remove from the oven. Cookies may feel soft. Let sit 5 minutes before removing from the pan. Cool completly before eating.
- Top with a pinch of sea salt if desired.
