Chocolate Chip Cookies with Almond Butter

Sweet nutty cookie that goes well with coffee, tea or milk.

Ingredients

  • 1 cup almond butter
  • 1 egg, medium or large
  • 1 cup brown sugar, packed down tightly
  • 1 tsp vanilla, or omit if you are observant
  • 1 cup chocolate chips
  • 1/2 cup walnuts, chopped
  • Sea salt to taste

Instructions

  • Preheat oven to 350° F.
  • Mix almond butter, egg, brown sugar, and vanilla with a fork or spatula.
  • Fold in chocolate chips and walnuts
  • Bake 11 minutes and remove from the oven. Cookies may feel soft. Let sit 5 minutes before removing from the pan. Cool completly before eating.
  • Top with a pinch of sea salt if desired.
