Chopped Liver
You can serve chopped liver as shown with lettuce, tomatoes and olives; on rye bread; as a spread with crackers... So many options!

Ingredients
- ¼ cup schmaltz, plus more if needed in food processor
- ½ onion, chopped
- 1 lb chicken livers
- 3 hard boiled eggs, chopped
- ¼ onion, chopped
- salt to taste
Instructions
- Heat schmaltz then add 1/2 cup chopped onion. Cook until onion is soft.
- Add chicken livers and cook about 2-1/2 minutes per side. They should be just a little pink inside.
- Chop the livers.
- Put liver, hard-boiled eggs, sauteed onion, 1/4 raw onion and salt in food processor. Process all together, but keep it chunky. Add more schmaltz if needed for creaminess.
