WHY I LOVE THIS RECIPE: I really like being able to make this in the microwave. There are so few dishes so clean up is very easy.
Rice Pudding
Servings: 6 people

Ingredients
- 2 cups milk
- 1 cup rice, cooked
- 2 eggs, beaten
- ½ cup sugar
- ½ cup raisins
- 1 tsp vanilla
- ½ tsp cinnamon
Instructions
- Pour milk in 4 cup measuring cup. Cook on high 3-4 minutes or until steamy.
- Mix remaining ingredients in 2-quart casserole. Stir in hot milk. Cover with plastic wrap.
- Microwave on LOW for 20-25 minutes.
- Remove cover immediately and allow to stand until center is set.
Notes
Quick and easy dessert. Serve well-chilled with a dash of cinnamon on top.
