Ingredients

  • 2 cups milk
  • 1 cup rice, cooked
  • 2 eggs, beaten
  • ½ cup sugar
  • ½ cup raisins
  • 1 tsp vanilla
  • ½ tsp cinnamon

Instructions

  • Pour milk in 4 cup measuring cup. Cook on high 3-4 minutes or until steamy.
  • Mix remaining ingredients in 2-quart casserole. Stir in hot milk. Cover with plastic wrap.
  • Microwave on LOW for 20-25 minutes.
  • Remove cover immediately and allow to stand until center is set.

Notes

Quick and easy dessert. Serve well-chilled with a dash of cinnamon on top.
