Farmer’s Chop Suey

WHY I LOVE THIS RECIPE: There are likely as many version of Farmer’s Chop Suey as there are people who make it. This one was, and still is, my family’s favorite.

Farmer's Chop Suey

Ingredients

  • 1 bunch radishes
  • 1 bunch green onions
  • 1 cucumber, optionally peeled
  • ¾ cup sour cream
  • cracked pepper
  • snipped chives for garnish

Instructions

  • Cut the radishes in half lengthwise then in half crosswise. Slice the white and light green parts of the green onions. Slice the cucumber 3/4"-1" thick then quarter each slice. Put all ingredients into a bowl.
  • Add sour cream and cracked pepper to the above ingredients. Use more or less or each depending on your personal preference.
  • Garnish the top with snipped chives.

    I am in my 70’s and remember eating farmers chop suey at Farmers Market while visiting Los Angeles. It had bell peppers and carrots in addition to the radishes, cucumbers and onions. Also I think tomatoes. I make this often and put in as many veggies S I can
