Why I Love This Recipe: I love jicama and this is just a great salad to make ahead of time. It is so colorful and the lime juice with just a hint of sugar goes with so many meals.
Jicama Salad

Ingredients
- 1 large jicama, cut into thick matchstick pieces
- 1 small red pepper, cut into matchstick pieces
- 1 small green pepper, cut into matchstick pieces
- 1 small yellow pepper, cut into matchstick pieces
- 1 cup shredded carrots
- 2 large navel oranges, peeled and cut into large pieces
- 2 tsp sugar
- 3 Tbsp freshly squeezed lime juice
- 3-4 Tbsp olive oil
Instructions
- Mix all vegetables together in a bowl.
- Add oranges.
- Add sugar, mix well.
- Add olive oil and lime juice, mixing well.
- Refrigerate until ready to serve,
