Jicama Salad

Ingredients

  • 1 large jicama, cut into thick matchstick pieces
  • 1 small red pepper, cut into matchstick pieces
  • 1 small green pepper, cut into matchstick pieces
  • 1 small yellow pepper, cut into matchstick pieces
  • 1 cup shredded carrots
  • 2 large navel oranges, peeled and cut into large pieces
  • 2 tsp sugar
  • 3 Tbsp freshly squeezed lime juice
  • 3-4 Tbsp olive oil

Instructions

  • Mix all vegetables together in a bowl.
  • Add oranges.
  • Add sugar, mix well.
  • Add olive oil and lime juice, mixing well.
  • Refrigerate until ready to serve,
