WHY I LIKE THIS RECIPE: I love how easy it is to make this souffle with frozen blintzes. Alternating fruit and cheese blintzes is a great way to give it some color and taste variation. It is perfect for brunch for a crowd.
Blintz Souffle
Ingredients
- 1 pt sour cream
- 1/4 cup sugar
- 4 eggs
- 1 tsp vanilla
- 1 stick butter
- 10-12 frozen blintzes (alternate fruit and cheese)
Instructions
- Preheat oven to 350° F.
- Mix sour cream, sugar, eggs and vanilla in a mixer or blender.
- Melt butter in Pyrex baking dish in oven.
- Add blintzes to baking dish, then pour mixture over blintzes.
- Bake 1 hour.
