Dill Pickles

WHY I LOVE THIS RECIPE: This was Grandma Mollie’s recipe. I helped Mom make the pickles, and her unorthodox first step was to wash the pickling cucumbers by putting them in the washing machine and running the rinse cycle! When a jar of pickles was used up, Mom would save the pickled banana pepper for my Uncle Mel, who liked to eat them.

Servings: 10 1 qt. jars (approx)

Ingredients

Brine: approx 10 jars

  • 1 cup kosher salt
  • 5 qts water
  • 1 Tbsp olive oil

For each 1 qt. jar

  • 1 hot banana pepper
  • 1/2 tsp pickling spice
  • 2 small cloves garlic
  • 8-10 small pickling cucumbers (approx)
  • 1 sprig dill

Instructions

  • Mix brine ingredients.
  • Put pepper, pickling spice and garlic in sterilized 1 quart jar. Pack jar with pickles and top with dill sprig.
  • Pour in brine up to about 1/2" from top, clover tightly and put on shelf.
