WHY I LOVE THIS RECIPE: My Mother was a junior high school teacher and this was a recipe that was made by the cooks at the school. They were really happy to give the recipe to my Mother and we always challenged friends to try to figure out what the main ingredient was. Nobody ever guessed buttermilk!

This is an uncomplicated recipe that is unusual and really delicious.

Ingredients

  • 1 10" unbaked pie shell
  • 7¼ oz sugar
  • ¼ tsp salt
  • ¾ oz flour
  • 4 egg yolks
  • 4 oz melted butter
  • 2 cups buttermilk
  • 2 tsp vanilla
  • 4 egg whites

Instructions

  • Preheat oven to 325° F.
  • Combine sugar, salt, flour and mix well.
  • Mix slightly beaten egg yolks, melted butter, buttermilk and vanilla then blend into the sugar mixture.
  • Beat egg whites until they form moist peaks and fold into the custard mixture. Stir only until the egg whites are dissolved.
  • Pour into pie shell and bake for about 40 minutes, or until the top is crusty and brown.

    I made this recipe to use up buttermilk from another recipe. It is one of my favorite pie recipes. I had never folded beaten egg whites into a filling prior to baking. It made it light and custard-like. My husband loved it in spite of not liking buttermilk. I really can’t wait to make it again.
