WHY I LOVE THIS RECIPE: I love this easy-to-make creamy dessert that serves quite a few people. It also reminds me of my good friend Ellen from Chicago.
Ellen's Cheesecake

A very rich and dense cheesecake reminiscent of Eli's Cheesecake in Chicago.

Ingredients
Graham Cracker Crust
- 1½ cups graham cracker crumbs
- ½ cup butter
Filling
- 11 oz cream cheese, softened 2 hours
- 1 pt sour cream
- ¾ cup sugar
- 3 eggs
- 2 Tbsp flour
- 1 tsp vanilla
Topping
- 7 oz frozen strawberries
- ¾-1 cup sugar, to taste
- 2 Tbsp lemon juice
- 1½ Tbsp cornstarch mixed first with the lemon juice
- 1 pt fresh strawberries or any other fresh berries
Instructions
Graham Cracker Crust
- Mix ingredients and pat on bottom and up 1/4 of the sides of a spring form pan.
Filling
- Mix ingredients until the consistency of thick milk. Pour into the crust.
Baking
- Bake at 450° F for ½ hour.
- Turn oven off. Leave in oven for ½ hour without opening oven.
Topping
- Cook filling ingredients together until thick and clear.
- Add 1 pint fresh strawberries or any other fresh berries.
- Put on top of baked cheesecake.
