WHY I LOVE THIS RECIPE: I love this easy-to-make creamy dessert that serves quite a few people. It also reminds me of my good friend Ellen from Chicago.

Ellen's Cheesecake

A very rich and dense cheesecake reminiscent of Eli's Cheesecake in Chicago.

Ingredients

Graham Cracker Crust

  • 1½ cups graham cracker crumbs
  • ½ cup butter

Filling

  • 11 oz cream cheese, softened 2 hours
  • 1 pt sour cream
  • ¾ cup sugar
  • 3 eggs
  • 2 Tbsp flour
  • 1 tsp vanilla

Topping

  • 7 oz frozen strawberries
  • ¾-1 cup sugar, to taste
  • 2 Tbsp lemon juice
  • 1½ Tbsp cornstarch mixed first with the lemon juice
  • 1 pt fresh strawberries or any other fresh berries

Instructions

Graham Cracker Crust

  • Mix ingredients and pat on bottom and up 1/4 of the sides of a spring form pan.

Filling

  • Mix ingredients until the consistency of thick milk. Pour into the crust.

Baking

  • Bake at 450° F for ½ hour. 
  •  Turn oven off. Leave in oven for ½ hour without opening oven.

Topping

  • Cook filling ingredients together until thick and clear.
  • Add 1 pint fresh strawberries or any other fresh berries.
  • Put on top of baked cheesecake.
