Easy Potato Salad

Ingredients
- 3 lbs potatoes peeled or not and cut into 3/4-inch chunks (8 medium)
- 1 Tbsp Salt
- 1½ cups mayonnaise
- 2 Tbsp sugar
- 2 Tbsp white or cider vinegar
- 1 Tbsp dijon or yellow mustard
- 1½ tsp salt
- ½ tsp pepper
- 1 cup onion, minced
- 2 stalks celery, thinly sliced
- 6 eggs, hardboiled and chopped
- paprika for garnish
Instructions
- Add potatoes to a pan and cover with water. Add 1 Tbsp. salt. Bring to a boil over medium-high heat. Simmer until potatoes are tender, about 10 minutes. Drain and place in bowl.
- Whisk mayonnaise, sugar, vinegar, mustard, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper.
- Add dressing to the potatoes and stir to combine. Stir in onion, celery, and chopped eggs. Garnish with paprika if desired.
