Easy Potato Salad

Ingredients

  • 3 lbs potatoes peeled or not and cut into 3/4-inch chunks (8 medium)
  • 1 Tbsp Salt
  • cups mayonnaise
  • 2 Tbsp sugar
  • 2 Tbsp white or cider vinegar
  • 1 Tbsp dijon or yellow mustard
  • tsp salt
  • ½ tsp pepper
  • 1 cup onion, minced
  • 2 stalks celery, thinly sliced
  • 6 eggs, hardboiled and chopped
  • paprika for garnish

Instructions

  • Add potatoes to a pan and cover with water. Add 1 Tbsp. salt. Bring to a boil over medium-high heat. Simmer until potatoes are tender, about 10 minutes. Drain and place in bowl.
  • Whisk mayonnaise, sugar, vinegar, mustard, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper.
  • Add dressing to the potatoes and stir to combine. Stir in onion, celery, and chopped eggs. Garnish with paprika if desired.
