Cheese Latkes
These latkes are easy to make and can be reheated in the microwave. The make-ahead convenience is perfect for busy days.

Ingredients
- 2 lg eggs
- 1 cup sugar
- 1 lg package cream cheese
- 5 Tbsp large-curd cottage cheese
- 3/4 cup matzah meal
- 1/2 tsp salt
- vegetable oil for frying
Instructions
- Mix the eggs and the sugar in the bowl.
- Add the cream cheese, cottage cheese, matzah meal and salt.
- Mix ingredients in either a food processor or in a mixer until smooth.
- Place a small amount of oil in a skillet and heat over medium heat.
- Frying a few at a time, add 1/4 cup of the batter and fry on each side until brown.
- Place a paper towel on a plate and let the oil from the hot latkes absorb into the paper towel. Change the paper towels as necessary.
- Serve with butter, syrup, jelly, brown sugar and cinnamon or with sour cream.
