Cheese Latkes

These latkes are easy to make and can be reheated in the microwave. The make-ahead convenience is perfect for busy days.

Ingredients

  • 2 lg eggs
  • 1 cup sugar
  • 1 lg package cream cheese
  • 5 Tbsp large-curd cottage cheese
  • 3/4 cup matzah meal
  • 1/2 tsp salt
  • vegetable oil for frying

Instructions

  • Mix the eggs and the sugar in the bowl. 
  • Add the cream cheese, cottage cheese, matzah meal and salt.
  • Mix ingredients in either a food processor or in a mixer until smooth.
  • Place a small amount of oil in a skillet and heat over medium heat.
  • Frying a few at a time, add 1/4 cup of the batter and fry on each side until brown.
  • Place a paper towel on a plate and let the oil from the hot latkes absorb into the paper towel. Change the paper towels as necessary.
  • Serve with butter, syrup, jelly, brown sugar and cinnamon or with sour cream.
