These latkes are easy to make and can be reheated in the microwave. The make-ahead convenience is perfect for busy days.

vegetable oil for frying
Instructions
Mix the eggs and the sugar in the bowl.
Add the cream cheese, cottage cheese, matzah meal and salt.
Mix ingredients in either a food processor or in a mixer until smooth.
Place a small amount of oil in a skillet and heat over medium heat.
Frying a few at a time, add 1/4 cup of the batter and fry on each side until brown.
Place a paper towel on a plate and let the oil from the hot latkes absorb into the paper towel. Change the paper towels as necessary.
Serve with butter, syrup, jelly, brown sugar and cinnamon or with sour cream.
