Coconut Pancakes

Ingredients
- 3 eggs, separated
- 3/4 tsp salt
- 3/4 cup cold water
- 1/2 cup matzah meal
- 1 Tbsp sugar
- 3/4 cup coconut
- sour cream, optional
Instructions
- Beat egg yolks with salt and water.
- Add matzah meal, sugar and coconut.
- Let stand 15 minutes.
- Beat egg whites until stiff.
- Fold into mixture.
- Drop by spoonfuls onto griddle, cooking until golden brown.
- Serve with sour cream if desired.
