Coconut Pancakes

Ingredients

  • 3 eggs, separated
  • 3/4 tsp salt
  • 3/4 cup cold water
  • 1/2 cup matzah meal
  • 1 Tbsp sugar
  • 3/4 cup coconut
  • sour cream, optional

Instructions

  • Beat egg yolks with salt and water.
  • Add matzah meal, sugar and coconut.
  • Let stand 15 minutes.
  • Beat egg whites until stiff.
  • Fold into mixture.
  • Drop by spoonfuls onto griddle, cooking until golden brown.
  • Serve with sour cream if desired.
