Fresh Horseradish

WHY I LOVE THIS RECIPE:  I love fresh horseradish with gefilte fish. For years, our local grocery stores run out of red beet horseradish and we go from store to store trying to find it. Now I make my own and do not have to worry about finding bottles of it. Usually, the horseradish has a nice bite to it. You can add more sugar to cut the heat.

Fresh Horseradish

Servings: 3 cups

Ingredients

  • 1 4" long piece of fresh horseradish, peeled and cut into chunks
  • 1 15 oz can beets, sliced
  • 1 tsp sugar
  • 1 tsp salt
  • 4 Tbsp white vinegar

Instructions

  • Chop horseradish root in a food processor using the chopping blade.
  • Add the beets and process until blended.
  • Add the remaining ingredients and process until the consistency that you prefer.

Notes

Beware that when you remove the lid of the food process the horseradish may burn your eyes.
