Jelly Roll

Ingredients
- 1/2 cup potato starch
- 1/4 tsp cinnamon
- 3 eggs separated
- 1/4 tsp salt
- 1 cup sugar
- 3 Tbsp orange juice
- jelly or other filling of your choice
Instructions
- Preheat oven to 375° F.
- Sift together potato starch and cinnamon.
- Beat egg whites and salt until stiff.
- Beat yolks, sugar and orange juice until very thick.
- Fold whites carefully into yolk mixture.
- Fold in potato starch and cinnamon, mix and blend.
- Turn into jelly roll pan that has been lined with aluminum foil and greased.
- Bake at 375° F for 12 minutes.
- Turn out on foil.
- Spread with jelly or other filling.
- Roll up.
Notes
For chocolate jelly roll: sift together 1/2 cup potato starch, 2 Tbsp cocoa, 1/4 tsp cinnamon. For liquid, use 3 Tbsp wine instead of orange juice.
