Ingredients

cup
potato starch
1/4
tsp
cinnamon
3
eggs
separated
1/4
tsp
salt
1
cup
sugar
3
Tbsp
orange juice
jelly or other filling of your choice
Instructions
Preheat oven to 375° F.
Sift together potato starch and cinnamon.
Beat egg whites and salt until stiff.
Beat yolks, sugar and orange juice until very thick.
Fold whites carefully into yolk mixture.
Fold in potato starch and cinnamon, mix and blend.
Turn into jelly roll pan that has been lined with aluminum foil and greased.
Bake at 375° F for 12 minutes.
Turn out on foil.
Spread with jelly or other filling.
Roll up.
Notes
For chocolate jelly roll: sift together 1/2 cup potato starch, 2 Tbsp cocoa, 1/4 tsp cinnamon. For liquid, use 3 Tbsp wine instead of orange juice.
