Jelly Roll

Ingredients

  • 1/2 cup potato starch
  • 1/4 tsp cinnamon
  • 3 eggs separated
  • 1/4 tsp salt
  • 1 cup sugar
  • 3 Tbsp orange juice
  • jelly or other filling of your choice

Instructions

  • Preheat oven to 375° F.
  • Sift together potato starch and cinnamon.
  • Beat egg whites and salt until stiff.
  • Beat yolks, sugar and orange juice until very thick.
  • Fold whites carefully into yolk mixture.
  • Fold in potato starch and cinnamon, mix and blend.
  • Turn into jelly roll pan that has been lined with aluminum foil and greased.
  • Bake at 375° F for 12 minutes.
  • Turn out on foil.
  • Spread with jelly or other filling.
  • Roll up.

Notes

For chocolate jelly roll:  sift together 1/2 cup potato starch, 2 Tbsp cocoa,  1/4 tsp cinnamon.  For liquid, use 3 Tbsp wine instead of orange juice.
