WHY I LOVE THIS RECIPE: Homemade matzah is a nice change from the boxed matzah that we eat at Passover. This recipe is similar to a lavash with a bit of matzahy taste. It is excellent with cream cheese or jelly.
Matzah - Homemade

Ingredients
- 1½ cup flour
- ¼ cup olive oil (or oil of your choice)
- 1 tsp salt
- ½ cup water
- 1 egg, beaten with a fork, if desired
Instructions
- Preheat oven to 450°.
- Add flour, salt to a bowl.
- Mix in olive oil and stir with a rubber spatula; the mixture will not be smooth.
- Mix in water until a soft dough forms.
- Knead gently with your hands until the dough is soft.
- Divide the dough into two balls. Place one ball on a mat with a small amount of olive oil rather than flour to roll the dough paper thin rectangle. You can use a glass or rolling pin to roll the dough
- Cut the dough into 4 squares or rectangles. Place each piece on a parchment lined baking sheet. Prick with the tines of a fork.
- Repeat with the other ball of dough.
- Bake 4 minutes on each side.
- Brush with beaten egg, if desired. (I omitted this step)
