Preheat oven to 450°.
Add flour, salt to a bowl.
Mix in olive oil and stir with a rubber spatula; the mixture will not be smooth.
Mix in water until a soft dough forms.
Knead gently with your hands until the dough is soft.
Divide the dough into two balls. Place one ball on a mat with a small amount of olive oil rather than flour to roll the dough paper thin rectangle. You can use a glass or rolling pin to roll the dough
Cut the dough into 4 squares or rectangles. Place each piece on a parchment lined baking sheet. Prick with the tines of a fork.
Repeat with the other ball of dough.
Bake 4 minutes on each side.
Brush with beaten egg, if desired. (I omitted this step)
