Matzo Brie (Fried Matzo)

This matzo brie recipe is from “The Cookery”, a cookbook published by the Temple Beth-El Sisterhood (South Bend, IN) in 1976. This cookbook is filled with old family recipes and I love referring to it. It was also much more progressive than its prior version, as the women actually used their own names and not their husband’s. The old version, for example, would have had “Mrs. Harold Berkson” instead of “Phyllis Berkson”.

Matzo Brie (Fried Matzo)

Ingredients

  • 4 sheets of matzo
  • cold water, enough to soak matzo
  • 4 eggs
  • 1-1/2 tsp salt
  • 3 Tbsp shortening

Instructions

  • Soak the matzos in cold water for 2 minutes. Drain and crumble.
  • Beat the eggs and salt together in a bowl. Add the matzos, mixing well until coated.
  • Heat shortening in a large skillet. Pour the mixture into it.
  • Fry until brown on both sides.
  • Serve with a little sugar or powdered sugar sprinkle on top. Can also be served with jelly.

    I made this recipe this morning. It was very good. I added a dash of maple syrup to the batter before I fried it. Yummy.
