WHY I LOVE THIS RECIPE: This recipe came from a synagogue cookbook. We had 3 families that celebrated holidays together and the reason we had 3 was because my husband’s brother married my sister’s husband’s sister. That’s a story by itself! When we got together for the holidays each of the women took a holiday and set up each course and each one of us brought a special food. I prepared the Potato Kugel for my contribution. The family looked forward to indulging in this kugel and I loved making it for that reason.
Potato Kugel
Ingredients
- 6 lg potatoes
- 1 onion
- 2 eggs
- 2 egg whites
- 1/4 cup unbleached flour
- dash of pepper
- 3/4 tsp baking powder
- 1/2 tsp garlic powder
- 2 tsp olive oil
Instructions
- Preheat oven to 350° F.
- Peel and shred potatoes and onion.
- Beat eggs and eggs whites until thick.
- Stir in potatoes, onions, flour, pepper, baking powder and garlic powder.
- Oil 12 ramekins or large muffin cups.
- Add potato mixture bake for about one hour or till brown and crispy.

The Tracing Roots & Building Trees project paired teens from Tucson Hebrew High with residents of Handmaker Jewish Services for the Aging to remember stories and favorite foods together. From this experience a cookbook, “L’dor v’dor: From Generation to Generation: Stories and Memories around Family and Food, was published.
