WHY I LOVE THIS RECIPE: My children disliked fish, they were very picky eaters. I very much wanted them to eat more, so, salmon croquettes were born. I thought that maybe if I made something like this, my kids would eat fish and I was right! Since its creation, the dish has been a family favorite. I made it for my kids weekly and now my great grandchildren eat it! Of course, it has been tweaked since then. Family members sometimes use tuna as opposed to salmon, but salmon croquettes remain a favorite!
We are now three generations of great grandchildren, they all love this treat. This recipe was part of my children growing up in New York during the 1950’s, and it was a lot of fun.
Salmon Croquettes
Ingredients
- 1 lb canned salmon
- 1 egg
- 1/2 cup seasoned breadcrumbs, plus more for dipping
- 1/4 cup onions, chopped
- 1/4 cup water
- oil for frying
Instructions
- Drain the salmon and mash it.
- Add the egg, breadcrumbs, onions and water. Mix.
- Add more breadcrumbs if the batter seems too loose.
- Form the mixture into patties.
- Dip the patties into breadcrumbs.
- Fry the patties until they are brown.
The Tracing Roots & Building Trees project paired teens from Tucson Hebrew High with residents of Handmaker Jewish Services for the Aging to remember stories and favorite foods together. From this experience a cookbook, “L’dor v’dor: From Generation to Generation: Stories and Memories around Family and Food, was published.
