Sweet and Sour Meatballs

This was one of my mother's "go to" recipes. Everyone loves it!
Makes about 50 appetizer-sized meatballs or about 20 meal-sized meatballs

Ingredients

Sauce

  • 2 cups tomato juice
  • 1 large onion, sliced
  • 1/4 cup ketchup
  • 1/4-1/2 cup brown sugar
  • 1 jar sweet & sour cabbage (optional)
  • 1 small can sauerkraut
  • 1-2 Tbsp grape jelly
  • 2 ginger snaps

Meatballs

  • 1 lb ground beef
  • 1 egg
  • 1/4 cup corn flake crumbs
  • 1/4 cup onion, minced
  • 2 Tbsp water
  • salt, pepper, garlic salt to taste

Instructions

Sauce

  • Put all of the sauce ingredients in a large pot and bring to a boil.

Meatballs

  • Mix all of the meatball ingredients together in a large bowl.
  • Gently form meat mixture into meatballs, being careful not to over handle.
  • Add meatballs to the boiling sauce.
  • Simmer covered for about 1-1/2 hours.

Notes

Even better if made at least a day before serving!
