Sweet and Sour Mexican Style Fish

WHY I LOVE THIS RECIPE: I really like how the sauce comes together with amazing flavor from the spices, olives and toasted almonds.

Sweet and Sour Mexican Style Fish

Ingredients

  • 3 lbs cod, cut from the center into 8 equal-sized pieces
  • 4 Tbsp olive oil, measured in 2 equal portions
  • 1 c large white onion, thinly sliced
  • 4 garlic cloves, finely chopped
  • 1 lb Roma tomatoes, diced
  • 1 lb tomatillos, husked, rinsed well, and diced
  • 1 tsp kosher salt
  • 1 Tbsp brown sugar
  • ¼ tsp allspice, ground
  • ¼ tsp cinnamon,
  • ¼ cup slivered almonds, toasted
  • ¼ c pimento-stuffed olives, sliced

Instructions

  • Heat 2 tablespoons oil in a skillet on medium heat. Add the onion and cook for a 3-4 minutes until they are soft
  • .Add the garlic and cook for a minute or two.
  • Add the tomatoes, tomatillos and salt, sugar, allspice, and cinnamon. Mix well and cook for 7-10 minutes, stirring occasionally, until the vegetables have softened,
  • Season fish with salt to taste. Heat the remaining 2 tablespoons of oil in a skillet over medium-high heat. Add the fish cook for one to until cooked though and is slightly brown.
  • Add the sauce over the fish, cover the skillet and reduce heat to low. Cook for 10 minutes.

Notes

Note: If you have not cooked with tomatillos they are sticky. Rinse them and proceed to the cooking. Any stickiness will disappear.
