Tabouli Salad

Ingredients
- ½ cup fine bulgar
- 4 firm Roma tomatoes, chopped fine
- 1 English cucumber, chopped fine
- 2 bunches parsley, stems removed, chopped fine
- 12-15 mint leaves, chopped fine
- 4 green onions, white and green parts, chopped fine
- Salt to taste
- 3-4 Tbsp lemon juice
- 3-4 Tbsp olive oil
Instructions
- Wash the bulgar wheat by rinsing in a fine sieve. Soak it in water for 8 minutes. Drain well and squeeze to remove excess water.
- Chop the tomatoes, cucumber, parsley, mint and green onions very fine.
- Place in a bowl and mix well. Add lime juice and olive oil. Mix again.
- Add salt to taste. Mix again.
- Add the bulgar. Mix well.
- Refrigerate until ready to use.
Notes
Unless you love parsley, try using only one bunch.
