Wash the bulgar wheat by rinsing in a fine sieve. Soak it in water for 8 minutes. Drain well and squeeze to remove excess water.
Chop the tomatoes, cucumber, parsley, mint and green onions very fine.
Place in a bowl and mix well. Add lime juice and olive oil. Mix again.
Add salt to taste. Mix again.
Add the bulgar. Mix well.
Refrigerate until ready to use.
