Fresh Peach Pie

Ingredients

  • 4 lbs sliced fresh peaches
  • ¾-1 cup sugar, depending on sweetness of peaches
  • orange juice
  • ¼ cup cornstarch
  • 1 tsp lemon juice
  • yellow food coloring
  • 1 baked 9" pie crust

Instructions

  • Mix together peaches and sugar.
  • Let stand one hour.
  • Drain the juice and add enough orange juice to make 1 cup liquid.
  • Bring liquid with cornstarch and lemon juice to a boil.
  • Add yellow food coloring until the right color.
  • Stir peaches into glaze and put into pie crust.
  • Refrigerate.

Notes

Use 5-1/2# peaches for a 10" pie.  Adjust remaining ingredients accordingly.
Use 3# peaches for a 8" pie.  Adjust remaining ingredients accordingly.
